What is Jun?

Jun is often called the champagne of kombucha - a lighter, more delicate fermented tea made with green tea and honey instead of black tea and sugar. The Jun SCOBY is a different culture from kombucha, specifically adapted to fermenting honey.

Jun ferments at cooler temperatures (68-75°F vs 75-85°F) and faster than kombucha (5-7 days vs 7-14 days), producing a lighter, more effervescent drink with subtle floral notes from the honey.

Obtaining a Jun SCOBY

Jun SCOBYs must be obtained from an existing Jun culture - you cannot convert a kombucha SCOBY to Jun. Sources include:

  • Local fermentation groups or friends who brew jun
  • Online SCOBY exchanges and communities
  • Specialized fermentation supply companies
